This mocktail is inspired both by the delicate flavors of Parfait Amour, a French liqueur whose name means ‘perfect love’, and by the Dwarves and their love of this precious stone.

Ingredients

  • 1/3 cup rosewater
  • 1/2 teaspoon almond essence
  • 1/2 teaspoon vanilla essence
  • 2 whole star anise
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon citric acid
  • 1 tablespoon edible silver sprinkles
  • 1 litre lychee juice
  • 120ml grapefruit cordial
  • 6 tablespoons lemon juice
  • 1.5 cups soda water

Instructions

  1. In a saucepan, combine rosewater, almond essence, vanilla essence, star anise, granulated sugar, and water.
  2. Bring the mixture to a simmer over medium heat, then reduce the heat to low. Allow it to simmer gently for 10 minutes to infuse the flavors.
  3. Remove the saucepan from the heat and stir in the citric acid and edible silver sprinkles until fully dissolved.
  4. Let the mixture cool down to room temperature.
  5. Once cooled, strain the mixture to remove the star anise and any solid particles.
  6. Transfer the infused syrup to a large pitcher.
  7. Add the lychee juice, grapefruit cordial, and lemon juice to the pitcher. Stir gently to combine all the ingredients.
  8. Place the pitcher in the refrigerator and allow it to chill for at least an hour, or until thoroughly chilled.
  9. Before serving, pour in the soda water and give the mocktail a final stir to ensure all the flavors are well mixed.
