Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup thickened cream
  • 5 teaspoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice, divided
  • 4 ounces Baileys
  • 4 ounces vodka
  • 4 ounces Kahlua
  • 1/4 cup brown sugar (for rimming)

Instructions

  1. Blend together the pumpkin puree, thickened cream, maple syrup and vanilla extract.
  2. Heat the pumpkin pie spice in the microwave for 30 seconds, stirring halfway.
  3. For each cocktail, in a shaker, add in a large ice cube block, 1/4 cup of the pumpkin puree blend, 1/4 tsp pumpkin pie spice, 1 shot each of Baileys, Kahlua and vodka.
  4. Shake vigorously for 30 seconds until the shaker is cold to the touch.
  5. Mix together 1 teaspoon pumpkin pie spice and brown sugar and spread on a plate.
  6. Rim a martini glass with pumpkin puree, then twist the rim on the brown sugar mixture.
  7. Strain the cocktail into the glass and serve.
