Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup boiling water
  • 8 ounces tequila
  • 8 ounces fresh lemon juice
  • 2 ounces Cointreau
  • Large ice block
  • 1/4 cup sea salt

Instructions

  1. In a measuring cup, stir together the granulated sugar and boiling water until dissolved to make a sugar syrup.
  2. In a shaker, add in a large ice block, then pour in the sugar syrup, tequila, Cointreau and lemon juice.
  3. Press the shaker lid firmly on and shake vigorously for about 20 seconds, until the shaker visibly frosts.
  4. Use a remaining wedge of lemon to wet the rim of a margarita glass, then twist the damp rim on a plate of sea salt (not table salt).
  5. Strain the mixture evenly into the four margarita glasses.

Ingredients

  • 1 bottle (750 ml) of red wine
  • 2 1/2 cups fresh orange juice with pulp
  • 2 1/2 cups lemonade
  • 1/2 cup Metaxa
  • 1 Granny Smith apple, cored and chopped
  • 1/4 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large pitcher, pour in the red wine, orange juice, lemonade and Metaxa.
  2. Add in the chopped apple, and stir in the sugar, lemon juice and cinnamon.
  3. Place in the fridge for a minimum of 4 hours, but ideally overnight.
  4. Strain into a clean pitcher before serving.

Notes

Metaxa can be switched out for regular brandy.

Instructions

  1. In a coffee grinder or a mortar and pestle, grind together the oregano and marjoram to a finer powder.

Lamb Marinade

  • 1/4 cup good quality olive oil
  • 2 cloves of garlic, crushed
  • 8 teaspoon lemon juice
  • 1 cup finely chopped red onion
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried marjoram
  • 500g cubed lamb

Sofa Souvlaki Bowl

  • 4 cups lettuce, shredded
  • 12 Roma tomatoes, quartered
  • 1 cup chopped cucumber
  • 4 Greek pita bread
  • 1/3 cup tzatziki

Instructions

  1. Mix olive oil, garlic cloves, lemon juice, red onion, black pepper, dried thyme, rosemary, and marjoram in a medium-sized bowl.
  2. In a large bowl, add cubed lamb and pour the olive oil marinade over it. Stir to combine.
  3. Cover the bowl with cling wrap and place it in the fridge for 2 hours to marinate.
  4. When ready, heat a grill pan over medium heat on the stove.
  5. Place a small piece of bread in the pan to test whether the oil is sufficiently hot. If it sizzles, the oil is ready.
  6. Spread the lamb cubes evenly over the grill pan.
  7. Stir the lamb after 5 minutes and cook for another 5 minutes.
  8. Let the lamb rest while you assemble your bowl.
  9. Brush pita bread with olive oil on both sides. Fry over medium heat in a large frying pan for 2 minutes on either side. Slice into quarters and place them on the bowl’s side.
  10. Divide the lettuce, Roma tomatoes, and chopped cucumber evenly across each bowl.
  11. Distribute the lamb evenly between the bowls and add a dollop of tzatziki dip.
  12. Serve immediately.

Notes

Greek pita bread and Turkish pita bread are both flatbreads, but they differ in texture and size. In Greek pita bread, the bread has a diameter between 6 and 8 inches and is split in half to form a pocket that can be filled with ingredients. Turkish pitas typically measure 12-24 inches in diameter and have a thin, yet chewy texture. Their size and thickness make them easy to wrap around fillings.
