Tips for a Perfect ‘Lovely’ Cheese Pizza

Mastering the ‘DJ Pizza Spin’

When you’re aiming for that perfect crust, forget the rolling pin—your hands are your best tools. The ‘DJ Pizza Spin’ isn’t about spinning records; it’s about stretching pizza dough like a pro. Here’s how to do it:

  • Generously flour your work surface and your hands to prevent dough from sticking.
  • Divide your dough into even balls. Stretch out one dough ball at a time, covering the remaining in a covered bowl.
  • Take one ball of dough and press down with your palms to create a flat disc. Place your fingertips in the middle, then splay them outwards to stretch the dough outwards. Rotate the dough a quarter turn and repeat pressing your fingers in and stretching them outwards and continuing to turn.
  • If the dough begins to spring back, let it rest for 5 minutes, before continuing.
  • If the dough tears, simply pinch it back together.
  • One ball of dough should stretch to 12” wide.

Ingredients

Scale

Pizza Dough

1 1/4 cups warm water, divided

1 tablespoon granulated sugar

2 (4 1/2-teaspoon) packets dry yeast

3 cups bread flour

1 teaspoon salt

8 tablespoons high-quality olive oil, divided

1/2 cup Pizza Sauce

Pizza Sauce

3 tablespoons olive oil

1 teaspoon garlic powder

1 1/2 teaspoons onion powder

1 teaspoon ground black pepper

1 tablespoon dried thyme

3 teaspoons balsamic vinegar

1 (4.5-ounce) can tomato paste

1/2 teaspoon granulated sugar

1/4 teaspoon salt

Pizza Toppings

2 cups grated mozzarella cheese

2 cups grated provolone cheese

Instructions

Pizza Dough

  1. Combine 1/4 cup of warm water, sugar, and yeast in a medium-sized measuring cup. Let it rest for 10 minutes to activate the yeast.
  2. In a stand mixer’s large bowl, whisk together the bread flour and salt. Create a well in the center and pour in the remaining 1 cup of warm water and 4 tablespoons of olive oil. Add the yeast mixture next.
  3. With the dough hook attachment, knead for 10 minutes until the dough is smooth and springs back when touched.
  4. Shape the dough into a ball. Coat a clean bowl with a bit of olive oil, place the dough inside, and turn to coat. Cover with plastic wrap and let it rise in a warm area for 1 1/2 hours, or until doubled in size.
  5. After the rise, punch the dough down, form it back into a ball, cover, and refrigerate overnight.

Pizza Sauce

  1. Heat 3 tablespoons of olive oil in a saucepan over medium heat.
  2. Stir in garlic powder, onion powder, black pepper, and thyme. Warm the spices for about 1 minute.
  3. Add balsamic vinegar, tomato paste, sugar, and salt. Stir until evenly combined.
  4. Take the saucepan off the heat and let the sauce cool for 10 minutes before placing it in a container. Refrigerate overnight.

Assembling the Pizza

  1. One hour before baking, remove the dough from the fridge to reach room temperature.
  2. Preheat your oven to 475°F (245°C), with pizza trays inside to heat up.
  3. Flour your work surface and hands. Divide the dough into two and press and stretch one ball into a 12-inch circle on the floured surface. If the dough rips, pinch the edges together. Repeat with the second ball.
  4. On a floured piece of baking paper, lay out one crust and evenly spread half of the pizza sauce. Add half of the mixed cheeses. Prepare the second crust similarly.
  5. Take one hot pizza tray from the oven, slide the pizza onto it, brush the crust with olive oil, and bake. Do the same with the second pizza.
  6. Bake for 12 minutes, rotating halfway through the cook time.
  7. Once done, brush the crusts with olive oil again, slice into wedges, and serve hot.

Choosing the Right Pizza Cheese

Cheese is the soul of a pizza, gluing all the toppings together and responsible for the gooey, melty experience we can’t wait to sink our teeth into. But don’t just grab a bag– the choice of cheese can make all the difference.

Why Mozzarella?

Mozzarella: the king of pizza cheese. High moisture content is what creates that melty stretch with every bite and browning without burning too quickly, for that golden cheese topping.

Why Provolone?

Blending Provolone cheese will melt beautifully into a mozzarella, add a bit of nutty tang to the mild and creamy flavor of mozzarella.

Freshly Grated vs Pre-shredded Cheese

While it’s tempting to grab a bag of pre-shredded cheese for convenience, take the time and grate your cheese fresh off the block. Preshredded cheeses often contain anti-caking agents that affect melt-ability and can introduce a powdery texture.
