Pizza Dough

1 1/4 cups warm water, divided

1 tablespoon granulated sugar

2 (4 1/2-teaspoon) packets dry yeast

3 cups bread flour

1 teaspoon salt

8 tablespoons high-quality olive oil, divided

1/2 cup Pizza Sauce

Pizza Sauce

3 tablespoons olive oil

1 teaspoon garlic powder

1 1/2 teaspoons onion powder

1 teaspoon ground black pepper

1 tablespoon dried thyme

3 teaspoons balsamic vinegar

1 (4.5-ounce) can tomato paste

1/2 teaspoon granulated sugar

1/4 teaspoon salt

Pizza Toppings

2 cups grated mozzarella cheese

2 cups grated provolone cheese


Pizza Dough

  1. Combine 1/4 cup of warm water, sugar, and yeast in a medium-sized measuring cup. Let it rest for 10 minutes to activate the yeast.
  2. In a stand mixer’s large bowl, whisk together the bread flour and salt. Create a well in the center and pour in the remaining 1 cup of warm water and 4 tablespoons of olive oil. Add the yeast mixture next.
  3. With the dough hook attachment, knead for 10 minutes until the dough is smooth and springs back when touched.
  4. Shape the dough into a ball. Coat a clean bowl with a bit of olive oil, place the dough inside, and turn to coat. Cover with plastic wrap and let it rise in a warm area for 1 1/2 hours, or until doubled in size.
  5. After the rise, punch the dough down, form it back into a ball, cover, and refrigerate overnight.

Pizza Sauce

  1. Heat 3 tablespoons of olive oil in a saucepan over medium heat.
  2. Stir in garlic powder, onion powder, black pepper, and thyme. Warm the spices for about 1 minute.
  3. Add balsamic vinegar, tomato paste, sugar, and salt. Stir until evenly combined.
  4. Take the saucepan off the heat and let the sauce cool for 10 minutes before placing it in a container. Refrigerate overnight.

Assembling the Pizza

  1. One hour before baking, remove the dough from the fridge to reach room temperature.
  2. Preheat your oven to 475°F (245°C), with pizza trays inside to heat up.
  3. Flour your work surface and hands. Divide the dough into two and press and stretch one ball into a 12-inch circle on the floured surface. If the dough rips, pinch the edges together. Repeat with the second ball.
  4. On a floured piece of baking paper, lay out one crust and evenly spread half of the pizza sauce. Add half of the mixed cheeses. Prepare the second crust similarly.
  5. Take one hot pizza tray from the oven, slide the pizza onto it, brush the crust with olive oil, and bake. Do the same with the second pizza.
  6. Bake for 12 minutes, rotating halfway through the cook time.
  7. Once done, brush the crusts with olive oil again, slice into wedges, and serve hot.
